  • Coconut Glazed Carrots

    In my bachelor pad, my roommate and I have been trying to learn how to cook. When we first moved in we hung a sign above our stove which reads "I kiss better than I cook." Since then, Nate and I have actually become quite talented at cooking and have been discovering/inventing new recipes. Also, recently my fiancé posted a sticky note below our kitchen sign that accurately documents our cooking talents in all its smiley-faced, girly hand written glory. "And I cook pretty darn well! :)"

    Last night I was making glazed carrots and realized we had a partial bag of coconut. Here is my new recipe.

    Coconut Glazed Carrots

    7 Carrots (all we had left)
    1 tsp Cinnamon
    1 tsp Nutmeg
    3 Tbsp Olive Oil
    1 Tbsp Brown Sugar
    1/4 cup coconut flakes

    Cut the carrots into 2"x.25" strips. Combine carrots with all ingredients in a zip lock bag. Shake until homogeneous. Spread the stuff on a 13x9 pan. Bake at 350 covered for 30 minutes. Bake uncovered for 5 more minutes.

    I would have taken pictures, but we ate it all before I could get my camera.

  • The Cat I Want

    I was looking at cat breeds online and found this one. I think I'm going to get one someday.

    They have an 8 foot vertical

    They can weigh up to 30 lbs

    They look like Cheetahs

    They can be trained to walk and run on leashes. I.e. I could take it running with me.

  • Grey Rock Pictures

    Here are some pictures from my weekend excursion to Grey Rock Mountain along the Poudre Canyon.  It is a 7 mile round trip hike that Becca, Nate, and I did in about 3 hours.  We spent 45 minutes up at the top.  It is relatively easy but gets kind of technical the last 1/2 mile because you are picking your own trail up a pretty steep cliff face.

    The weather was pretty bad so the light was terrible, ergo why the pictures didn't turn out as cool as I hoped they would.
